Coming from Alabama, I bring to you Angela's protein pancake recipe:
As I weight train, I'm always trying to find new ways to increase my protein intake in my diet while making sure I stay full throughout the day. It's easy to whip up a protein shake but after awhile that gets boring, and quite frankly, I am always immediately hungry after. This recipe I threw together was a combination of a Pinterest find and a remix of my own (because I used what was in my pantry). These protein pumpkin pancakes were the PERFECT post-workout meal/ lunch that kept me full for hours and fell exactly within my macros. And who doesn't love eating sweets without the guilt-- I know I do!
In total, this meal was 292.6 calories (41.5 g protein, 20.7 g carbs, 4.9 g fat).
Here's what you need:
2 T coconut flour
1/2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp pumpkin spice (if you have it)
pinch of salt
1/2 tsp vanilla extract
1/4 cup canned pumpkin
6 T egg whites
1 T almond milk
1 scoop protein powder (you can use any neutral tasting protein powder; mine was cake donut flavor which added so much flavvvve to the pancakes)
2 T of PB2 powdered peanut butter for topping
I sifted the coconut flour, baking powder, and protein into a bowel to avoid clumps. In a second bowel I whisked the egg whites and vanilla extract. I then added the liquid mix to the powders until it thickened. Next I added the canned pumpkin, and almond milk to the mix. Lastly, I added the spices and salt. Heat a pan, spray with cooking oil, and make just as you would regular pancakes!! For the finishing touch, I spread PB2 powdered peanut butter on the top of each cake (this was my substitution for syrup) and then sprinkled some extra cinnamon on top.
Nothing like starting my October early in September (I'm clearly ready for fall)!
