I won't lie; when I first found this recipe and tried it for the first time, I thought I was going to make bank baking these in my kitchen and selling them. Then I thought I like you guys too much to take your money for something you can easily do yourself, so I'm going to share. Once you get the secret ingredient, it's a piece of cake (tastes like one at least).
I've been eating Quest bars for about 5 years now and I have yet to find a bar that I like better; at this point, I don't think it's possible. The only problem is, the price adds up. They're about $25-30 per box, and if you're like me who eats one every day, that's about $50 every other week, which adds up to $1,300 per year I spend on quest bars. Yes, I spend thousands of dollars on quest bars every year, really not ok. SO I one day decided to look up the recipe for homemade quest bars and I found what makes Quest bars so delicious.
The key ingredient is called IMO (isomalto-oligosaccharide). This ingredient functions as a dietary fiber, prebiotic, low-calorie sweetener. To read more about the functions of IMO, Click Here. This ingredient has appeared in many protein bars hitting the market now. Vitafiber is the brand of IMO I have and I purchased Here on Amazon.
Yes, it's pricey, but with this recipe, you'll save 50% of every quest bar you ever buy; worth it.
Now I share with you the beloved Homemade Cooke Dough Quest Bar Recipe!
1 1/2 cups VitaFiber Syrup
2 tsp Vanilla Extract 3 cups Whey Protein Powder, vanilla 1/3 cup Almond Flour 24 squares no-sugar-added Chocolate (85 g bar)
Microwave the VitaFiber Syrup for about 60 seconds, or until it starts to bubble (don't overheat!). When it just starts to bubble, remove from microwave and immediately add protein powder, vanilla extract almond meal. Stir it around until it comes together- it will be hard to stir
Let cool for 2-3 minutes
While cooling, chop HALF of the chocolate bar and add to bowl of mix, it will probably melt into the mixture
Pour into 9x9 pan, let cool for another 5 minutes
Add other half of the chopped chocolate to the top
Let cool in fridge for about 15-20 minutes, and enjoy!
I'm an extremely impatient baker, hence the chunk eaten in the pic above. I can't even wait 5 seconds to take a picture before I try a bite, sad.
