Calling all hummus and chicken lovers (assuming that's around 99% of the population?), this is the recipe for you! If you're like me, you go to the grocery store and buy 3 large bags of frozen chicken breasts and let them sit in the freezer for weeks because you're too lazy to thaw them + there are way too many ways to prepare chicken that it's overwhelming, so you end up living off of lunch meat or pre-cooked chicken that's packed with sodium and chemicals. <- sorry, minor rant there. Not anymore!! With this simple recipe that takes only 10 minutes of prep time, and 25 minutes cook time, you'll have moist chicken and veggies to last you the whole week. So let's get to it:
If you have frozen chicken breasts, place a bag in the fridge the night before so it has time to thaw.
Preheat your oven to 450. Take 2 Zucchini squash, 2 summer squash (yellow squash), 1 large onion and chop lengthwise. Combine them in a large bowl with 2 Tbsp. Olive oil. I didn't have olive oil on hand so I used 1/4 cup Lite Italian Dressing.
Spread squash's and onions on the bottom of a 9 X 13 baking dish, slab your 5(ish) chicken breasts on there, top each breasts with about 2 Tbsp hummus (I use garlic hummus), throw in some sliced lemons, and sprinkle some Paprika on top.
Cook for 25 minutes and voilà! Yes, that is all. And with that you get this beautiful dish that's a weeks worth of dinner:
