Open-Faced Egg Sandwich
1 piece whole wheat toast (I use Ezekial bread)
3 egg whites or 1/3 cup liquid egg whites
1 slice turkey bacon
2 Tbsp black bean & corn salsa
2 Tbsp plain 0% fat Greek yogurt
Pepper, to taste
Microwave or heat your egg whites on pan until cooked through.
While cooking your eggs, toast your piece of whole wheat
toast and microwave your turkey bacon in 30 seconds intervals,
depending on your preference of crispiness. After
all of your ingredients are cooked through, mash the
avocado onto the toast, then add the bacon, salsa, greek yogurt, and
your egg. Top with your preference of pepper and enjoy!!
