Homemade Quest Bars
1 1/2 cups VitaFiber Syrup
2 tsp Vanilla Extract
3 cups Whey Protein Powder, vanilla
1/3 cup Almond Flour
24 squares no-sugar-added Chocolate (85 g bar)
Microwave the VitaFiber Syrup for about 60 seconds, or until it starts to bubble (don't overheat!). When it just starts to bubble, remove from microwave and immediately add protein powder, vanilla extract, and almond meal. Stir until it comes together- it will be hard to stir. Let cool for 2-3 minutes. While cooling, chop HALF of the chocolate bar and add to bowl of mix, it will probably melt into the mixture. Pour into 9x9 pan, let cool for another 5 minutes. Add other half of the chopped chocolate to the top. Let cool in fridge for about 15-20 minutes, and enjoy!
